Five Question Friday–Getting Political with Dexter


1. Where do you hide junk when people come over?

~In my room, always.  It’s the only place I won’t let people go. You should see how bad my room gets before Anna’s birthday parties, or holiday parties.

2. Do political ads help you decide who you are going to vote for?

~They actually make me not want to vote at all.  All I keep hearing are how bad the other candidates are. 

3. What's your favorite holiday party to host?

~ Christmas would be my favorite.  I just love Christmas. 

4. You go to an island with your husband and can only take one personal item. What is it?

~Hmm.. No wii fi so I guess my phone and laptop would be useless.  I have to say my Bible but I will probably smuggle in a deck of cards too.  Winking smile

5. If you found out your spouse was a Dexter style serial killer (only kills people to save others) would you rat?

~Nope.. not at all.  What an adventure his life would be.  Although I would be really shocked to find out how he managed it all when he doesn’t leave the house without me.  Maybe when I am sleeping??  No wonder he is always so tired.  He does nap an awful lot.

A late Five Question Friday–Mooo!

I completely forgot about Five Question Friday.  It was such a stressful day, I forgot everything.  Sigh.  Better late than never, right?

1. Did you have any homecoming traditions?

~Homecoming for what?  Totally clueless here! 

2. Do you ask your spouse before spending money?

~ Only on big items like a camera.  I would do the research, present him with my options and ask what he thinks.  He is so wonderful that 90% of the time, he will tell me to get it.  I don’t think I ask for much at all.  Matter of fact, my camera is about 6 years old.  Now I do want a Kindle.  He thinks I should wait.  As much as I would love one, I am not about to fight over it considering it is a want, not a need.  He is completely right in us not getting one right now.  It would be silly of me to push. 

As for him, he is pretty much the same way.  He will ask what I think about him getting a new video card for the computer.  I take care of the checkbook and the bills. He actually handed them over to me after we got married and I have not had a problem with a that.  Being a single mom for 10 years, it helps me to know exactly what we have.  He will always ask if we have enough for certain items like gas, etc. We have never had an argument over finances. I am so thankful for that. 

3. If you could be famous for something what would it be?

~I have no desire to be famous.  I do not like to stand out at all.  I like my privacy. Smile 

4. Have you ever seriously thought you were going crazy?

~Yes, there have been times when I just completely felt like I was going insane. Almost like a mental breakdown I guess.  The last time was when I got the news that Angel was not going to make it out of the surgery room.  That was the most terrifying moment of my life.  I felt like I had no control over the sound coming from my lips.  I didn’t even care who heard me.  It was the oddest feeling.  I am so thankful that the Lord did not think Angel was ready to leave us yet. 

5. How do you eat your steak? Burger? (as in, well done, medium, still moo-ing...)

Burger - Well done.  No red or pink in that meat.  There was a time it did not worry me at all.  Matter of fact, mom taught me to taste the meatball mixture before we rolled them up. (I know some of you are disgusted now.. sorry)  Just to make sure it was seasoned correctly.  Nothing was measured.. it was a pinch of this and a handful of that.  Now however, I do not trust it.  My son once got in trouble at a church camp because he refused to eat the hamburger they served him.  It was red in the middle.  I was proud of him for not giving in and very disappointed with the adults in charge. 

Now, steak is a different matter.  I don’t mind pink.  The inside isn’t exposed to bacteria like the outside.  However I don’t want running red juices either.  I guess I am kinda particular with my meat.  LOL.

How I survive Pizza Night

I have been doing really well staying Gluten and Dairy free.  The few slip ups I have had the past year is usually pizza night.  I love pizza.  It is truly torture to watch the family eat it.  Especially when my daughter doesn’t want to finish her slice.  I have to tell her to get ride of it before I cave.

One day I was making my usual Kimchi Pancake that I learned from this video….



This recipe is so simple.  I just can’t handle recipes that call for many different types of flours.  This recipe uses corn starch.  I did substitute half with potato starch and it worked out just as great. 

So, as I was making it, I came across an idea to try.  It came out wonderful.


First I start off sautéing whatever I would like in the pizza.  Here I have onions, mushrooms, hot peppers and pepperoni. 

Then I would mix the ingredients that is shared on the website above.  I make a bit more than what she uses. 

  • 1/4 cup of corn starch
  • 1/4 cup of potato starch (or you can do all cornstarch)
  • 1 egg
  • 2 tbsp. of water then 1 tbsp. at a time till it is of pourable consistency (if needed).


I spread out the meat and veggies in the pan evenly, making room for the mixture to get in between everything.  I pour the mixture slowly over it all.  Then I just it cook enough for the bottom to be done. 

The first time I tried this I flipped it over to cook on the other side, sliced and dipped in sauce.  This time I decided not to flip it.  After the bottom is cooked I poured a bit of sauce on the top with some scallions. 

Popped it into my oven to broil the top and this is what I got.



Sliced it up and voila. 


It was so good, I didn’t even look at the family with envy as they were eating there take out pizza.  Seriously, the possibilities with this recipe is endless.

Still working on that healthy lifestyle

I just realized this morning that I have not talked about my healthy eating lately.  It’s a long battle.  I am continuing to be be gluten and casein free, however I have had some setbacks.  Pizza seems to be a huge downfall.  After dealing with the consequences, I decided it is not worth it.  So I am back to avoiding them.

At first I dropped about 25 pounds really fast, just by being gcf.  My weight has been pretty consistent regardless of what I eat.  The problem is, I am not losing more.  An online friend just surprised her hubby by losing 77lbs while he was overseas.  It was just amazing to see the pics and video she shared.  I realized that I do not want to keep living like this. 

Monday morning a friend invited me to a weight loss challenge.  This is done with friends that she knew in person.  We share our weight and beginning photo, send 10.00 to the leader and just encourage each other to keep going.  The challenge ends on New Year’s Eve.  The winner is determined by percentage loss.  There isn’t a lot of members so not a lot of money to be won, but just enough to motivate me and make it fun.

So far today is day 3 and I am doing pretty well.  I started off Monday just putting the food into  Yesterday I focused on drinking water.  Did you know that you are supposed to drink 1/2 your body weight.  There is no way that would be possible at this time.  I did manage to drink 3 liters yesterday.  That’s a lot of bathroom breaks! 

Today I started off Wii Boxing and feeling good.  I usually do pretty well starting out.  My problem is sticking with it.  It easily becomes boring to constantly count calories and such.  This needs to be a lifestyle.  It has been scary watching everything my husband has gone through the past 2 years. I want Anna to grow up with both her parents.  I know that we do not know the future however I don’t want my lack of self discipline to be a factor in the outcome. 

I know there are quite a few weight loss challenges like this out there. Some even have more of a payout for higher winnings.  Has anyone come across challenges like this before?

Family fun at the Autumnfest

Today we headed to Rhode Island early. 

It is Autumnfest Weekend and we really didn’t want to miss it this year.

Hanging around at a Spaghetti Dinner.

Today was a very busy day.  Annaleah had rehearsal this afternoon so we rushed her to be there on time.  Then we headed over to Burlington Coat Factory where Ethan tried on some silly hats. 




We drove around for a bit waiting for Anna’s rehearsal to finish up.

After picking up Anna we headed out to

St. Joseph’s School for the Spaghetti Dinner.




Gotta love that face.


While waiting for Anna to perform, Ethan had a blast with these popsicle sticks.  I got the idea from Pinterest.  I cut up a strip of vecro and put pieces on each end.  I played with this for hours.  Talk about cheap fun.

Unfortunately I did not get any pictures of Anna’s performance.  We had to sit on the side lines so other people could enjoy their meals.  I did attempt some videos, but due to choreography I can’t share them here.  Sad smile 

Tomorrow will be another busy day.  Hopefully I will get lots of pictures.

Five Question Friday – Embarrassing CD’s and most hated chores.

1. What album/cd/download are you embarrassed to admit you have?

~The Monkees Greatest Hits.  I love the Monkees and I want the full series of their TV show.  Does that make me weird? 

2. What's the one thing your spouse does better than you?

~Hmm.. I have to think on this one.  There are some things that he cooks/makes better than I do.  Like some korean dishes and western omelet.  He is way better at fixing computers but the since I have to pick one thing, that would be ….. Procrastination!  (sorry honey.)

3. When do you start buying Halloween Candy?

~Usually a week or two before Halloween…

4. Family closets - Yay or nay?

~Nay!  There are jam packed with things I do not want to go through. 

5. Which home/cleaning chore do you hate the most? Why?

~Usually I would say laundry, but I think I detest dusting the most.  A chore I had as a kid and always hated it.  Laundry and dishes come in at a close second.  Unfortunately I can’t get away from those.

My little artist and her doctor’s appointment

We have been learning a bit about Claude Monet for the last few weeks. 

Anna watched a tutorial on how to do a painting similar to

Monet’s Pond of Nympheas (water lilies)


I think she did an amazing job!


Then she decided to paint something of her own. 


Anna went for her checkup this week at her pediatrician’s office.  It has been quite some time since she has been.  I won’t say how long because I know someone will complain.  Last year she did go to a homeopathic doctor and all was well with her.  We decided to see her previous doctor this year due to health care not covering the homeopathic doctor. 

I was surprised when the doctor actually remembered us.  She asked about our now grown son and how everything has been with the cleft specialist from the past.  Then the talk came about immunizations.  After discussing what she felt was really needed I looked over at Anna who looked paralyzed with fear!  I explained to Anna that nothing would be done today.  We would take all the information home and talk about it.  Anna did agree to have her finger pricked for iron, which she later regretted, and her levels are fine.  Everything else was good. 

So there has been a lot of discussion going on with us about vaccines, protection, etc.  I think it is a huge learning experience for her.  I am so glad that I have the opportunity to help her learn things instead of just forcing things upon her.  I know that there is a time and place where some things can not be talked over, certain times where action must be dealt with quickly.  However, I am thankful for the times we can talk and learn things together.
