Last night I was making everyone Spaghetti and Meatballs. I have not made meatballs since the diet change 5 months ago. I started searching for recipes online but they seem so complicated sometimes. I remembered in the past I had made meatloaf with oatmeal instead of breadcrumbs. So I decided to just make it simple. (Sorry, I don’t measure.)

I made quinoa pasta for the first time as well. It was not bad at all. Much better than the rice pasta!
